Fall-Off-The-Bone BBQ Pork Ribs with Creamy Potato Salad

Ingredients

For the Ribs:

  • 1 rack of skinless pork ribs (about 2.2 lbs)

  • 3 teaspoons Perfeito Pork Seasoning

  • 3 teaspoons sugar

  • 1 cup barbecue sauce

  • Aluminum foil

For the Potato Salad:

  • 6 potatoes

  • 1 tablespoon white vinegar

  • 1½ cups mayonnaise

  • 3 hard-boiled eggs

  • 1 teaspoon Perfeito All-Purpose Seasoning

  • 2 teaspoons Dijon mustard

 

Instructions

Step 1: Season the Ribs

In a small bowl, mix the Perfeito Pork seasoning and sugar. Rub this mixture generously over both sides of the ribs, massaging it in to fully coat the meat.

Step 2: Roast Low and Slow

Place the seasoned ribs on a non-stick baking sheet and cover tightly with aluminum foil. Roast in a preheated oven at 350°F (180°C) for 2 hours.

Step 3: Glaze and Finish

Remove the foil and brush the ribs all over with barbecue sauce. Return to the oven, increase the temperature to 400°F (200°C), and roast for an additional 20 minutes until the sauce is caramelized and sticky.

Step 4: Make the Potato Salad

While the ribs finish, cook the potatoes in an air fryer at 400°F (200°C) for 20 minutes. Peel and cut them into large chunks. In a mixing bowl, season with white vinegar and Perfeito All-Purpose seasoning.

Chop the hard-boiled eggs and add them to the bowl along with mayonnaise and Dijon mustard. Mix until everything is well combined and creamy.
