Ingredients:
- 6 thin pork loin cutlets (Very thin-cut steaks, no more than 1/5 of an inch thick.)
- 1 tablespoon Perfeito Pork Seasoning
- 2 eggs
- 1 cup panko breadcrumbs
- 1 cup all-purpose flour
- 2 sweet potatoes
- 10 oz (2 cups) white mushrooms
- 1 onion
- 1 tablespoon butter
- 2 teaspoons Perfeito All-Purpose Seasoning
- 2 cups frozen peas
- 2 cups beef broth
- 2 tablespoons cornstarch (dissolved in ½ cup of water)
- 1 cup heavy cream (35%)
- Vegetable oil, for deep frying
Instructions:
Sweet Potatoes:
1) Peel and cut the sweet potatoes into medium cubes.
2)Season with 1 teaspoon of Perfect All-Purpose seasoning, mix well, and drizzle with olive oil.
3)Cook in the air fryer at 400°F (200°C) for 20 minutes.
Peas:
1) Dice the onion into small cubes. In a saucepan, melt the butter and sauté the onion until golden.
2) Season with ½ teaspoon of Perfeito All-Purpose.
3) Once the onion is golden, add the frozen peas and cook over low heat for 8 to 10 minutes, stirring occasionally.
Mushroom Gravy:
1) Slice the mushrooms.
2) Heat a saucepan and add the sliced mushrooms, sautéing without stirring too much.
3) Season with ½ teaspoon of Perfeito All-Purpose.
4) Pour in the beef broth.
5) Dissolve the cornstarch in water and add it to the sauce, stirring constantly.
6) Once the sauce thickens, add the heavy cream and let it simmer for 2 minutes.
Schnitzel:
1) Season both sides of the pork cutlets with Perfeito Pork.
2) Beat the eggs in a bowl.
3) Dredge each cutlet in flour, then in the beaten eggs, and finally coat with panko breadcrumbs.
4) Heat the oil to 350°F (180°C) and fry the breaded pork for 5 to 8 minutes, until evenly golden brown.
How to Serve:
Serve the schnitzel with sautéed peas and golden sweet potatoes, drizzled with the mushroom gravy.
