Ingredients
- 2 lbs thick chuck pot roast or sirloin, cut into cubes
- 3 medium potatoes, peeled and diced
- 1 large carrot, peeled and chopped
- 2 medium onions, sliced
- 2 garlic cloves, minced
- 1 tablespoon hot paprika
- 1 tablespoon Perfeito Beef Seasoning or Perfeito All-Purpose Seasoning
- 1 bouquet garni (recipe below)
- 1 tablespoon butter
- Enough water to cover the ingredients
For the Bouquet Garni:
- 1 celery stalk
- 2 bay leaves
- 1 sprig of parsley
- 1 sprig of thyme
Instructions
1. Prepare the Meat:
Cut the chuck pot roast or sirloin into cubes and season it with Perfeito.
2. Make the Bouquet Garni:
Tie a celery stalk, bay leaves, parsley, and thyme with string to form a bouquet garni.
3. Brown the Onions:
In a large pot, melt butter over medium heat. Add the chopped onions and cook until golden brown.
4. Add Paprika and Meat:
Stir in the paprika, mix well, and then add the seasoned beef cubes. Cook on low heat, covering the pot. Simmer for about 2.5 hours. Alternatively, you can use a pressure cooker for 40 minutes.
5. Add Vegetables:
After the meat has cooked, add the diced potatoes and sliced carrots to the pot. Pour enough water to cover the ingredients, then stir well.
6. Simmer the Stew:
Bring the stew back to a simmer and cook for another 15 minutes, or until the potatoes are tender. Don’t use the pressure cooker during this step to keep the potatoes intact.
