Prep Time: 10 minutes
Cook Time: 30 minutes
Serves: 2
Ingredients:
-
1 duck magret (breast with skin), about 1 lb
-
1 ½ tablespoons of Perfeito Chicken Seasoning or Perfeito All-Purpose Seasoning
-
½ cup port wine
-
¼ cup honey
-
1 lb mixed berries (blackberries, raspberries, blueberries, strawberries)
-
1 small onion, finely chopped
-
2 sprigs fresh thyme
Instructions:
1. Prep the Duck
-
Score the duck skin with a sharp knife in a shallow criss-cross pattern.
-
Rub Perfeito all over the duck, making sure to season both sides evenly.
2. Sear to Perfection
-
Heat a skillet over high heat. Place the duck skin-side down to render the fat and crisp up the skin. Flip and sear the other side until the meat is still a nice deep red.
-
Remove the duck from the pan, but don’t toss out that golden fat—it’s liquid flavor gold!
3. Make the Sauce
-
In the same pan, sauté the onion in the duck fat until softened. Toss in the thyme for an aromatic kick.
- Add the berries, port wine, and honey. Let everything simmer gently for about 5 minutes, just until the berries soften but don’t completely fall apart.
4. Rest and Slice
-
Let the duck rest for a few minutes—it helps lock in the juices. Then, slice thinly against the grain for tender, juicy pieces.
5. Plate It Like a Pro
-
Spoon the berry port sauce onto a plate and arrange the duck slices over it. Add a sprig of thyme for a simple but elegant garnish.
Pro Tip: Serve with extra sauce and a side of fresh bread or brioche. You’ll want every last drop!
