Ingredients
-
1 T-bone steak (approx. 2 lbs)
-
1 red onion, sliced into thin petals
-
2 garlic cloves, crushed
-
1/2 cup fresh lemon juice
-
2 sprigs of fresh oregano
-
1 tbsp Perfeito Beef Seasoning or Perfeito All-Purpose Seasoning
-
2 tbsp butter
-
1 tbsp olive oil
Instructions
1.Season the Meat:
Generously rub the T-bone steak with Perfeito. Set aside for 10 minutes.
2. Prepare the Marinade:
Combine the sliced onion, crushed garlic, lemon juice, and fresh oregano leaves in a deep container. Add the seasoned T-bone steak, ensuring it’s fully coated. Cover and refrigerate for 8-12 hours.
3. Prep Before Cooking:
Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.
4. Sear the Steak:
Heat a cast-iron skillet over medium-high heat. Add the olive oil and butter. Once melted, place the steak fat-side down to render the fat. Sear each side of the meat until browned.
5. Add Marinade Ingredients:
When flipping the steak to brown the other side, add the onions from the marinade to the skillet. Discard the lemon juice.
6. Check Doneness:
Use a meat thermometer to achieve your desired level of doneness:
Rare (very red-pink): 125–130°F (approx. 8 minutes)
Medium Rare (pink): 130–135°F (approx. 9 minutes)
Medium (light pink): 135–140°F (approx. 10 minutes)
Medium-Well: 140–150°F (approx. 11 minutes)
7. Rest & Serve:
Allow the steak to rest for 5 minutes before serving. Plate with the cooked onions and enjoy!
Chef’s Tip:
A cast-iron skillet helps achieve a beautiful sear, locking in juices and enhancing flavor.
