1. Season the Wild Boar Ribs

  • Generously rub Perfeito Pork on both sides of the wild boar ribs, focusing on the meaty side. Make sure to coat evenly.

  • For a refined touch, score the fat of the ribs with shallow slits in a lozenge pattern. Rub more Perfeito into these cuts for extra flavor.

2. Prepare the Baking Pan

  • Line a baking pan with oven/roasting cellophane, leaving excess to fold over the ribs later.

  • Place the seasoned wild boar ribs onto the cellophane and add sprigs of fresh rosemary for an herb-infused aroma.

3. Add the Vegetables

  • Arrange the baby potatoes (with skins on) and halved, peeled pearl onions around the ribs in the baking pan. The potatoes and onions will soak up the delicious flavors from the meat as they cook.

4. Add Fresh Lemon

  • Squeeze fresh lemon juice over the meat and vegetables to bring a zesty, bright contrast to the richness of the ribs.

5. Cook the Dish
